Poppy Seed & Lime Pancakes with Kitl Elderflower Syrup

Recipe for Poppy Seed & Lime Pancakes with Kitl Elderflower Syrup

(Makes 10 medium-sized pancakes for 2-3 people.)

Ingredients:

  • 2 eggs
  • 120g all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tbsp. {12g} vanilla sugar
  • 30g caster sugar
  • zest from 1 lime {~1 tbsp.}
  • 125ml buttermilk
  • 2 tbsp. {20g} poppy seeds
  • a few knobs of butter
  • Kitl Elderflower Syrup

To serve:

  • powdered sugar for dusting
  • fresh berries

Instructions:

  1. Separate the eggs into 2 medium sized bowls.
  2. Using a hand mixer whisk the egg whites until soft peaks form. Set aside.
  3. In the other bowl with the egg yolks add flour, baking powder, baking soda, vanilla sugar, sugar, lime zest, buttermilk and poppy seeds. Whisk until combined.
  4. Fold in the egg whites with the pancake batter.
  5. Heat up a knob of butter in a pan on medium heat. Then, using a 1/4 cup {or any measure that you like} drop in the batter into the pan. Let it cook until bubbles form, then carefully flip the pancakes over. Repeat with the rest of the batter.
  6. Serve with fresh berries and a drizzle Kitl Edlerflower Syrup and enjoy.
